Quick and easy health meal!

Hi everyone!

I hope you are well and have been enjoying this warmer weather!

This week, I thought I would share with you an evening meal I have been absolutely loving that is healthy, quick to prepare and only needs four ingredients: My sweet potato and salsa salad.


  • 1 Sweet potato
  • 1 Red onion
  • 3 Salad tomatoes
  • Cucumber

Step 1 – Pre-heat your oven to 180 degrees

Step 2 – Place your sweet potato onto a baking tray. Note: You do not need to stab holes in it and can add a little salt and pepper for extra flavour if you wish.

Step 3 – Put your sweet potato into the oven for around 30-45 minutes depending on the size.

Step 4 – Dice your red onion and put into a bowl. Note: I usually do the whole onion as this creates a good amount of salsa that I can use again.

Step 5 – Slice some cucumber, dice it into small cubes and place in the bowl with the red onions.

Step 6 – Cut your salad tomatoes in half then each side in half again.

Step 7 – Cut or scrap the jelly and seeded bit of the tomato and put in the bin.

Step 8 – Dice your tomatoes and add to the bowl with the onion and cucumber.

Step 9 – Mix these together and that is your salsa complete!

Step 10 – Check on your potato after 30 mins and by giving it a little squeeze. If it is still hard, pop it back into the oven. Note: If you are feeling super hungry at this point, pop it into the microwave with a piece of kitchen roll over it for a few minutes, then pop it back into the oven for a minute or two to get it crispy.

Step 11 – Once your potato is cooked, open it up and serve with your salsa in the middle!

Step 12 – Put any remaining salsa in the fridge to use again.
