Hello, hello, hello, everyone!!! How are you?

This week I thought of sharing some tasty recipes that I have found quite easy and simple to make.

1. Basmati rice with vegetables.

Ingredients:

  • Basmati rice (I normally add like three handfuls per person)
  • 1 or 2 carrots
  • Pepper (I normally add the three colour ones)
  • One or two onions
  • Breaded chicken (ones that come already made, or you can make them from scratch)
  • Soy sauce
  • A teaspoon of salt and pepper
  • Three tablespoons of vegetable oil

Method:

  1. Heat up the oven in preparation for the breaded chicken.
  2. Cut the onion into small pieces. Cut the peppers and carrots into thin strips.
  3. Add the oil and the vegetables into a pan and fry with very low heat.
  4. In the meantime, boil the rice and add the chicken to the oven.
  5. Stir the vegetables until they are soft. Rice tends to take about 15 to 20mins and by the time it’s ready, the veg will also be ready as well as the chicken. Add the rice to the vegetables and heat it up.
  6. Continue adding the soy sauce, salt and pepper and stir.
  7. Finally add the rice with veg onto a plate and the breaded chicken and it’s ready to eat!

 

2. Homemade pizza

Ingredients:

  • Two teaspoons of olive oil
  • Two teaspoons of white wine
  • A glass of flour
  • Half a glass of boiling water
  • Salt and oregano
  • Tomato paste
  • Grated cheddar and mozzarella cheese
  • Jam (or any other thing you want to add to the pizza)

Method:

  1. In a bowl, mix the flour with boiling water, oil, wine, salt and pepper.
  2. Heat the oven top and bottom to 200 degrees.
  3. Check with your fingers that the pizza dough doesn’t stick to your fingers. If it does, add more flour. Once it’s ready, flatten it and shape it however you like (I find it easier to shape it as a square and it fits better in the oven).
  4. Place the pizza in the oven for about 1 minute (until you see that it’s become a bit hard but not too much).
  5. Take the pizza out, spread the tomato paste, cheddar cheese and anything you would like to add to your pizza. Add mozzarella cheese on top and oregano and put it back into the oven until you see the cheese has melted and it has become a slightly golden colour and it will be ready to eat.

 

3. Loaded fries

Ingredients:

  • Chilli powder
  • Beef Oxo cube
  • Minced beef
  • Two cloves of garlic
  • An onion
  • A red pepper
  • Two tablespoons of vegetable oil
  • Tomato paste
  • Cheddar cheese
  • Oven fries

Method:

  1. Cut the onion, garlic and pepper into small pieces.
  2. Add the oil to the pan and fry the vegetables until they are soft. Cook the fries in the meantime. On another pan, cook the meat.
  3. Mix the veg with the meat in the pan and add the chilli powder, tomato paste and beef Oxo cube and mix.
  4. Add cheese and stir until it melts.
  5. Place the fries on a plate and add the meat on top. Now you could add some jalapenos, spring onion and sour cream on top and it’s ready to eat.

 

4. Penne Bolognese

Ingredients:

  • Red pepper
  • Carrots
  • Onion
  • Two cloves of garlic
  • Olive oil
  • Tomato puree
  • Penne pasta
  • Minced beef
  • Two beef Oxo cubes

Method:

  1. Cut the vegetables and fry with olive oil until soft.
  2. Blend the vegetables creating a smooth puree.
  3. Cook the minced beef with the Oxo cubes.
  4. Mix in the pan the tomato puree with the vegetable puree and the meat, and heat for about 10 minutes.
  5. In the meantime, boil the pasta.
  6. Once the pasta is cooked, add it to the meat and it’s ready to eat.

 

5. Corty Sandwich

Ingredients:

  • Bacon (two slices)
  • Sandwich bread (about 4 slices)
  • Lettuces
  • Egg
  • Caesar sauce
  • Chicken
  • Grated cheddar cheese

Method:

  1. Cook the bacon
  2. Grill the chicken
  3. Fry the egg
  4. Toast the bread
  5. Make a hole on the centre of one slice of bread
  6. Build the sandwich: one slice of toasted bread, a bit of Caesar sauce, lettuce and bacon. Then place another slice of toast, add lettuce and grilled chicken with cheese and Caesar sauce. Finally add another slice of toast, lettuce, fried egg and the toast with the hole on top of the egg, leaving the yoke going through the hole.
